Whether you cook these tasty burgers under the broiler or on the grill, they are sure to prove popular with everyone.

  • Yields: 4

Ingredients

1 tablespoon olive oil, plus extra for brushing

1 small onion, finely chopped

1 garlic clove, crushed

1 teaspoon ground cumin

1 teaspoon ground coriander

� teaspoon ground turmeric

1 � cups finely chopped mushrooms

14-ounce can red kidney beans, drained and rinsed

2 tablespoons chopped cilantro

Whole-wheat flour, for forming the burgers

Salt and ground black pepper

To serve

Warm pita bread

Plain yogurt

Green salad

Tomatoes

Directions

1Heat the olive oil in a deep, heavy frying pan

2Add onion and garlic and fry over medium heat, stirring occasionally, for about 4 minutes, or until softened

3Add the cumin, ground coriander and turmeric and cook for 1 more minute, stirring constantly

4Add the mushrooms and cook, stirring until softened and dry

5Remove the pan from heat

6Put the beans into a bowl and then mash them with a fork

7Stir mashed beans into the mushroom mixture then add the cilantro mixing thoroughly

8Season well with salt and pepper

9Using floured hands form the mixture into four flat burger shapes. If the mixture is too sticky to handle, mix in a little flour

10Pre-heat the broiler

11Brush the burgers with oil and broil them for 8-10 minutes, turning once until golden brown. Alternatively, cool on the grill, using a wire rack to turn them easily

12Serve immediately with warm pita bread, yogurt, a crisp green salad, and tomatoes
