Tabbouleh Appetizer Pizzas

This recipe combines tabbouleh, the bulgur salad with a hint of mint and feta cheese.

8 pita breads

� cup/100 g/4 oz tabbouleh

185 ml/ 1/3 pt boiling water

4 tablespoons fresh mint, finely chopped

1 large handful parsley, finely chopped

4 tablespoons olive oil

Juice of 1 lemon

� teaspoon salt

2 Italian sat

2 Italian plum tomatoes

� cup/50 g/2 oz sliced almonds

1 cup/220 g/8 oz feta cheese, crumbled


Make the Tabbouleh

1Cover the bulgur with boiling water and set aside for 30 minutes

2The water should be completely absorbed

3When the bulgur is ready add the fresh mint, parsley and spring onions

4Stir in the olive oil, lemon juice and salt

5Finely dice the tomatoes and gently mix into the tabbouleh

6Store in the refrigerator until ready to use

Make the Pizzas

1Lightly toast the pita bread

2Spread a portion of the sliced almonds on each piece

3Spread the tabbouleh over the nuts on each pita

4Top with feta cheese

5Place under hot grill for two or three minutes until feta just begins to melt.

Because good tabbouleh needs to chill in the refrigerator, make it ahead of time. When its time to eat assemble and bake the pizzas in just a few minutes.
